A Lavender Matcha Toast to Galentine’s
A cocktail made for long chats, good music, and staying in
Valentine’s Day doesn’t need a script. This February, we’re leaning into Galentine’s – the kind of love that shows up unannounced, pours another glass, and stays for one more conversation.
Enter: The Lavender Matcha Tonic.
A lightly floral, gently energising cocktail made with Encha’s Lavender Latte Matcha – bright in color, smooth on the palate, and designed for evenings that start slow and linger longer.
It’s celebratory without being sugary. Elevated without being complicated. Matcha, but dressed for the occasion.
Why Lavender Matcha Works in a Cocktail
Encha’s Lavender Latte Matcha starts with first-harvest Japanese matcha, blended to stay smooth and vibrant when paired with milk – or, in this case, something a little more playful.
The lavender adds a soft floral note that pairs beautifully with berries and botanicals, while matcha brings balance, depth, and clean energy that won’t overpower the night.
The Lavender Matcha Tonic
Serves 1 | Easy to batch for a group
You’ll need:
Ice cubes
1 teaspoon Encha Lavender Latte Matcha
70 ml hot water (about 175°F / 80°C)
200 ml berry tonic (chilled)
40 ml alcohol-free gin (optional)
Fresh rosemary (to garnish)
How to make it:
Whisk the matcha
In a small bowl or shaker, whisk the Lavender Latte Matcha with hot water until smooth and fully dissolved.
Build the glass
Fill a tall glass with ice. Pour in the berry tonic and alcohol-free gin.
Add the matcha
Slowly pour the matcha over the tonic. Let the layers settle, then gently stir.
Finish & serve
Garnish with a sprig of rosemary. Sip slowly.
When to Serve It
This is a drink made for Galentine’s moments that don’t follow a schedule: dinner parties that stretch past dessert, getting ready together before heading out, or staying in and dressing up anyway. It’s for celebrating friendship without the crash – something you can sip slowly while the conversation keeps going. Matcha keeps the flavor vibrant. Lavender keeps the mood soft.
It’s a toast to connection – without overdoing it.
