Ingredients:

For the Cookies:

· 50g soft butter

· 20g sugar

· 60g flour

· Pinch of salt

· 1 teaspoon Encha Organic Matcha

For the Icing:

· 70g icing sugar

· 1 teaspoon hibiscus infusion

Instructions:

1. Prepare the Dough:

· Cream the butter and sugar together until light and fluffy.

· Sift in the flour, salt, and matcha. Mix until a smooth dough forms.

· Wrap the dough and place it in the fridge for 30 minutes.

2. Shape the Cookies:

· Roll out the chilled dough on a floured surface to about 5mm thickness.

· Use a heart-shaped cutter to create cookies and place them on a parchment-lined baking sheet.

· Chill again for 30 minutes.

3. Bake:

· Preheat the oven to 180°C (356°F) and bake for 8-10 minutes until the edges are slightly golden.

· Let them cool completely on a wire rack.

4. Make the Hibiscus Icing:

· Mix the icing sugar with the hibiscus infusion until smooth.

· Dip each cooled cookie into the icing and let the excess drip off.

· Sprinkle with freeze-dried strawberries and a touch of matcha powder for an extra special touch.
