About Culinary Grade Matcha

Culinary grade matcha is hand-picked and ground from premium second harvest leaves. Culinary matcha is a lower-grade, less expensive matcha which add an earthy, nutty flavor, and makes it ideal for cooking, baking, ice cream, and more. In terms of health benefits, there are no differences between ceremonial grade and culinary grade, therefore, using culinary matcha is a great food coloring substitute while also providing you with amazing health benefits such as antioxidants, increased brain function, and promoting heart health.

How to Use Culinary Grade Matcha

One of our favorite ways to use Encha Culinary-Grade matcha is for making cookies. Our matcha cookies are easy to make and have a unique flavor combination making them great for sharing with friends and family.

Matcha cookie instructions:

1. Preheat oven to 350F and line your baking tray with parchment paper

2. In a large mixing bowl, add 1/2 cup room temperature butter and 3/4 cup sugar. Mix in 2 Tbsp sifted Encha matcha powder. Add egg and vanilla extract and combine.

3. Combine flour, baking soda and salt in a bowl and add it to the butter-sugar mixture. Begin beating on low speed until flour is incorporated. Scrape mixing bowl to ensure flour is evenly distributed in the dough.

4. Scoop spoonfuls of your mixture onto baking tray. Bake cookies for 8-10 minutes, or until they are no longer shiny on top.

Culinary vs. Ceremonial Grade Matcha

Matcha is classified in three different grades: ceremonial, latte, and culinary. All three grades of matcha are harvested at different times and have unique flavor notes and use-cases. Ceremonial grade matcha comes from premium first-harvest leaves which are the youngest, sweetest, and most desirable leaves to make matcha with. Culinary grade matcha comes from the premium second-harvest leaves which are often more mature, earthy, and less vibrant. Ceremonial grade is the highest quality matcha powder which makes it ideal for consumption in the traditional ceremonial way, by just adding hot water. Culinary grade matcha powder is most suitable for incorporating in ice cream, baked goods, or smoothies, and is the most affordable grade of matcha.
